Cocktail-urile care răcoresc vara

Atrag prin felul spectaculos în care arată, prin gust, prin ingredientele din care sunt preparate şi ne plac mai ales vara. Ce poate fi mai încântător decât să stai pe marginea piscinei şi să bei un cocktail? Ăsta e un vis frumos de vară! Chiar dacă pentru a bea un cocktail nu trebuie să respecţi un anumit ritual, aşa cum e cazul când serveşti cognac, totuşi există un savoir-faire şi când vine vorba de cocktail-uri. Specialiştii şi cunoscătorii ştiu ei ce spun când vorbesc despre o adevărată cultură.
Nu se cunoaşte de unde vine numele de cocktail, însă se ştie sigur că vechii romani amestecau vinurile şi că amestecurile de băuturi erau folosite drept medicament. Este atestat faptul că în 1949 Jerry Thomas a realizat primul cocktail flambat, iar în 1962 tot el a publicat primul manual de reţete de cocktail. Şi ca să înţelegeţi că a fi barman nu e o treabă chiar aşa de simplă, să ştiţi că în Italia există chiar o facultate care pregăteşte oameni pentru această meserie.
Ingrediente speciale, nume exotice care vorbesc despre conţinut, aspect încântător, cam asta este ceea ce înseamnă pentru noi azi o astfel de băutură. Deşi aşa ceva se serveşte şi iarna, vara este anotimpul când ne atrage cel mai tare un amestec de licori care îmbie prin miros, conţinut şi, mai ales, aspect.
Eugen Vernea, specialist în cock- tail-uri cu participări la concursuri internaţionale, vorbeşte despre acest domeniu având pe masă o Bartender‘s Bible. „Există o şcoală americană, una europeană şi una peninsulară în materie de preparare a unei astfel de băuturi”, explică Vernea. Ce este cel mai important la un cocktail? „Echilibrul. Să nu fie prea dulce, prea acidulat, adică să aibă echilibrul gustului. Un cocktail trebuie să fie echilibrat în materie de aspect, gust şi miros. în România nu există o cultură a cocktail-ului, însă clienţii barurilor trebuie să ştie că există o artă legată de prepararea şi servirea acestor băuturi”, spune el. „Este foarte importantă comunicarea dintre client şi barman. Acesta din urmă trebuie să aibă abilitatea de a comunica cu cei care vin să comande o băutură, să le explice din ce este preparată şi chiar să ştie când să le servească un anumit produs în funcţie de starea lor sufletească. Un barman trebuie să ştie toate produsele din bar, să le cunoască gustul şi istoria şi apoi să se orienteze şi să le armonizeze. Contează foarte mult creativitatea la un barman”, este de părere Eugen Vernea.
Chiar dacă la noi în ţară nu există o adevărată cultură a cocktail-urilor, amatorii trebuie să afle că există barmani mixologi care doar creează cocktail-uri şi sunt foarte minuţioşi în a respecta proporţiile, şi barmani de show care impresionează prin modalitatea de preparare, chiar dacă nu sunt atât de minuţioşi în ceea ce priveşte cantităţile de ingrediente folosite. De asemenea, mai trebuie reţinut că este foarte important gustul, echilibrul, aspectul, denumirea, prospeţimea fructelor folosite, dar şi paharul în care se serveşte. Poate nu ar strica să ştiţi că există cocktail-uri aperitive, mai uşoare, puţin alcoolizate, consumate înainte de masă şi cocktail-uri digestive, mai tari sau mai dulci, consumate după masă.
Gheaţa nu lipseşte din nici o reţetă, iar lămâia este un ingredient aproape omniprezent. Femeile le preferă pe cele exotice, slab alcoolizate, numite şi long drink, în timp ce bărbaţii le aleg pe cele alcoolizate, energy drink. Barmanii se întrec în imaginaţie când vine vorba de creative cocktails care nu conţin alcool şi pentru care nu există un reţetar. Iar dacă vă este foame şi nu vreţi să plecaţi de la piscină, puteţi comanda un cocktail fără alcool pe bază de frişcă sau lapte; este destul de consistent şi vă va da senzaţia de saţietate. Unele cocktail-uri se decorează doar pentru aspect, altele şi pentru gust.
Nu trebuie să alegeţi un cocktail doar pentru că arată bine sau vă impresionează felul spectaculos de preparare, ci trebuie să vorbiţi cu barmanul să vedeţi exact ce conţine, dacă vă plac ingredientele respective şi, abia apoi, să comandaţi. Acesta este sfatul specialistului pentru toţi amatorii de cocktail-uri care, mai ales vara, vor să se răcorească cu o astfel de băutură.
Şi pentru că am avut în faţă un specialist, l-am rugat să ne dea câteva reţete de cocktail-uri pe care să le servim în această vară.
